Ribeye Steak

The ribeye, they are taken off the Cote de Boeuf,  dry aged rib off the bone. We would cook them 2 minutes each side for rare, four for medium, and six for well. 

But everything is about resting, it elevates the steak, and is essential. 

Five ten minutes rest, on a warm plate. Beautiful.
